A summery cocktail made with limoncello, fresh lemons and plenty of mint. It's super refreshing, delicious and perfect for sipping on when the sun is shining!
So, who is ready for summer?! Lemonade has been a longtime favorite summer drink, so if you are a fan of cocktails this gingery vodka lemonade is ideal for hot summer afternoons and warm summer evenings!
Ginger beer is a great cocktail mixer. You're probably most familiar with it in a Moscow Mule but it works for many other cocktails as well, giving them a nice slightly spicy taste.
This adult version of lemonade gets a super lemony flavor from the combo of fresh lemon juice and Limoncello. If you want to make this one non-alcoholic, add a little extra lemon juice to make up for the lack of Limoncello.
Ingredient Notes
- Vodka: A plain, non-flavored vodka is best for this drink. Use our favorite brand.
- Limoncello: While making homemade limoncello (or any infused alcohol) is not very complicated, because it's something I don't use often, I typically don't make my own and simply keep a bottle of it in the freezer so it's there when I need it.
- Lemons: Depending on the size of the lemons, you'll need 3-4 for a quarter cup of juice.
- Mint: I'm experimenting with growing mint in the garden this year, so if you grow your own this is a great way to use it.
- Ginger beer: Q Drinks is my favorite brand of ginger beer but use what you like best.
- Simple syrup: You can either make your own by mixing equal parts of sugar and water and cooking it over medium heat while stirring until the sugar is dissolved. You can also grab a bottle of premade simple syrup at your local liquor store.
Tips for making ginger lemonade
- Muddle the mint well. This is key to getting the right flavor in your cocktail. Just be careful since you are doing this in the drinking glass.
- Go for a good quality limoncello. Some inexpensive varieties are made with artificial lemon powder and don't taste very good.
- Add crushed ice at the end. Since you are stirring the drink to mix it, it's easiest if you wait until the end to add the ice.
Snacks that go perfectly with cocktails
As much as I love a good cocktail, I always like to pair cocktails with a few little nibbles. Two of my favorite dips to serve with cocktails are this Cowboy Caviar and this Edamame Avocado Hummus.

Ginger Mint Vodka Lemonade Cocktail
Ingredients
- ¼ cup fresh mint leaves
- 8 ounces ginger beer
- 1 ounce vodka
- 1 ounce Limoncello
- 3 tablespoons simple syrup
- ¼ cup fresh lemon juice
Instructions
- Muddle the mint. In a large glass, muddle the mint leaves in the simple syrup and 1 tablespoon of the lemon juice.
- Make the cocktail. Add the rest of the lemon juice and stir well. Add the Limoncello and vodka and stir. Top with ginger beer. Add crushed ice, and if desired, garnish with mint leaves.
