The Paloma is said to be one of Mexico's favorite cocktails! This version gets the added twist of pomegranate for a really unique flavor that will make it a year-round favorite.

Since it's in season from October through February, pomegranate might make you think of winter but I think it's the perfect addition to this somewhat summery drink, though a Paloma really works at any time of year!
Here's the funny thing about this one - I don't actually like grapefruit. Or at least I thought I didn't - you know how you have something, maybe when you are a kid and have the idea in your head that you don't like it? That's how I've been with grapefruit for years. I remember my dad eating it for breakfast with brown sugar sprinkled on it and even with the sugar, it just never appealed to me. But in recent years I've had an obsession with grapefruit both in cocktails and in salads. I recently had it in a salad from a place called Lowdown Brewery in Denver, which made me want to start experiment more with adding grapefruit to salads!
Traditionally a Paloma is made with grapefruit soda however you now often see if dressed up with other flavors to add some variety and additional interest. This combination is fizzy, slightly sweet from the pomegranate and tart from the grapefruit juice for a balanced combo. If you are not drinking or just want a tasty afternoon beverage you can leave the tequila out as well - just add a bit more club soda to balance out the juices.
Since this drink doesn't require a shaker to make it comes together in about 5 minutes. I make the recipe for an individual drink but if you are making more than four at a time I'd recommend using a pitcher to make your life a little easier. Just mix up all the ingredients except the club soda there then pour into glasses filled with ice. Top each drink with club soda right before serving if you are going that route.

Pomegranate Palomas
Ingredients
- 2 ounces white tequila
- 4 ounces fresh grapefruit juice
- 1- ounce pomegranate juice
- 1- ounce fresh lime juice
- 1-2 ounces club soda, to taste
- pomegranate seeds and lime slices for serving
Instructions
- Add the tequila and juices to a cocktail glass of your choice. Stir well. Add ice and a splash of club soda.
- Garnish with grapefruit or lime slices and a few pomegranate seeds. Serve.
