Blend the wet ingredients. Add the egg, cottage cheese and milk to a small blender. Blend on high until the mixture is fairly smooth.
Add the dry ingredients. Add the flour, baking powder and salt. Blend again until smooth.
Heat the pan. Heat an 8" non-stick skillet over medium heat (about a 6 on the cooktop) for 30 seconds. Add the butter and let it melt. Swirl to make sure the pan is coated.
Cook the pancake. Pour the batter into the heated pan and let it cook for two minutes. Using a large spatula, lift the edge to make sure it's golden brown on the bottom. Then carefully flip the pancake and let it cook for an additional minute.
Serve. Remove the pancake from the pan and top with syrup, sliced fruit or your favorite pancake topping.
