This cottage cheese pancake is both easy to make and delicious. It's made in the blender with cottage cheese, eggs, and all-purpose flour. Ready in less than 10 minutes, it's the ideal weekday breakfast.

Blender recipes are becoming one of my new breakfast favorites. You toss several ingredients in the blender, mix them up and then cook. It's quick and easy!
I'm a big fan of savory breakfast but these pancakes are a game changer. The addition of cottage cheese to the batter helps to keep me full and you can't beat the soft, fluffy, melt-in-your-mouth texture. They remind me a little bit of dutch baby pancakes but are much quicker and easier to make.
I did some extensive testing on these to figure out the perfect consistency and cooking method. I landed on using an 8" non-stick pan to create the perfectly sized single serving pancake.
A quick note about cooking time. I currently cook on an induction cooktop so on my cooktop I use a 6 heat setting, which is just above medium, for this recipe. Depending on your range, you might have to experiment a little but use the times listed in the recipe as your starting point.

How to make it
With a simple ingredients list and the help of a mini blender, these pancakes come together in a snap!

- Blend the cottage cheese: Add the egg, milk and cottage cheese to a blender (a mini or smoothie blender is ideal), and blend until mostly smooth.

- Finish the batter: Then add flour, baking powder and salt, and blend again until smooth, for about 45 seconds.

- Start cooking: Heat the pan on just above medium heat for 30 seconds. Then add butter and let it melt, making sure the pan is coated. Add the batter and let the pancake cook for 2 minutes.

- Flip and finish: Using a large spatula, carefully flip the pancake and cook it for an additional minute. Remove from the pan and serve.
Serve this pancake topped with maple syrup, some butter, and a handful of sliced strawberries. You can also try it with some blueberry compote.

Single Serving Cottage Cheese Pancake
Ingredients
- 1 large egg
- ⅓ cup cottage cheese
- ½ tbsp milk
- 2 tablespoon all-purpose flour
- ½ teaspoon baking powder
- ⅛ tsp salt
Instructions
- Blend the wet ingredients. Add the egg, cottage cheese and milk to a small blender. Blend on high until the mixture is fairly smooth.
- Add the dry ingredients. Add the flour, baking powder and salt. Blend again until smooth.
- Heat the pan. Heat an 8" non-stick skillet over medium heat (about a 6 on the cooktop) for 30 seconds. Add the butter and let it melt. Swirl to make sure the pan is coated.
- Cook the pancake. Pour the batter into the heated pan and let it cook for two minutes. Using a large spatula, lift the edge to make sure it's golden brown on the bottom. Then carefully flip the pancake and let it cook for an additional minute.
- Serve. Remove the pancake from the pan and top with syrup, sliced fruit or your favorite pancake topping.
